Margherita-style Pizza is a classic, simple pizza topped with tomato sauce, fresh mozzarella cheese, basil leaves, and a drizzle of olive oil. During Ramadan, creating this delicious dish can be a delightful way to break your fast at sunset, known as Iftar. Mixing the traditional Italian flavors with the spirit of Ramazan, this pizza offers a light yet satisfying meal for friends and family to enjoy together during this special time of reflection and togetherness.

For the base

300g strong bread flour
1 tsp instant yeast (from a sachet or a tub)
1 tsp salt
1 tbsp olive oil, plus extra for drizzling
For the tomato sauce
100ml passata
handful fresh basil or 1 tsp dried
1 garlic clove, crushed

For the topping

125g ball mozzarella, sliced
handful grated or shaved parmesan (or vegetarian alternative)
handful of cherry tomatoes, halved

To finish

handful of basil leaves (optional)

  1. Crafting the Base

    Begin by creating the pizza base. Combine flour, yeast, and salt in a bowl. Create a well in the center and pour in 200ml warm water along with olive oil. Blend the mixture with a wooden spoon until a soft, slightly moist dough forms. Knead the dough on a floured surface for about 5 minutes until it turns smooth. Cover it with a tea towel and set it aside. While allowing it to rise is optional for a thin crust, you can opt to let it rise if preferred.
  2. Preparing the Sauce

    Next, prepare the sauce by mixing passata, basil, and crushed garlic, seasoning it to taste. Let the sauce stand at room temperature while you proceed with shaping the pizza base.
  3. Rolling out the Dough

    If the dough has risen, give it a brief knead and divide it into two balls. On a floured surface, roll out the dough into sizable rounds, approximately 25cm across, using a rolling pin. Ensure the dough is exceptionally thin as it will expand in the oven. Transfer the rounds onto two floured baking sheets.
  4. Topping and Baking

    Preheat the oven to 240C/220C fan/gas 8. Place another baking sheet or an inverted baking tray in the oven on the top shelf. Spread the sauce evenly over the bases using the back of a spoon. Sprinkle cheese and tomatoes over the sauce, drizzle with olive oil, and season. Position one pizza, still on its baking sheet, onto the preheated sheet or tray. Bake for 8-10 minutes until it crisps up. Serve with an additional drizzle of olive oil and basil leaves if preferred. Repeat the process for the remaining pizza.
