  • Ingredients of Tuscan Tortellini Soup

Soup

1 tbsp extra virgin olive oil
3 garlic cloves, minced
1 package cheese tortellini
4 cups chicken broth (or vegetable)
3 tbsp all-purpose flour
1 tsp salt
1 cup heavy cream
1 cup kale, chopped
4 mini red sweet peppers, chopped
2 tbsp tomato paste
2 cups cherry tomatoes, halved
½ lemon, squeezed

Tuscan Spice Mix

½ tsp dried basil
1 ½ tsp dried oregano
½ tsp rosemary
1 tsp marjoram
½ tsp sage
1 tsp dried thyme
½ tsp fennel seeds
1 tsp garlic powder
1 tsp sundried tomatoes, finely diced
1 tbsp lemon zest

  1. Prepare the Tuscan Spice Mix

    Grind dried basil, oregano, rosemary, marjoram, sage, thyme, fennel seeds, garlic powder, sundried tomatoes, and lemon zest in a mortar and pestle to break the fennel seeds.
  2. Sauté the Aromatics

    In a medium-sized Dutch oven over medium-high heat, heat the olive oil. Then, add minced garlic, chopped sweet red peppers, and cherry tomatoes. Sauté for 2 minutes until fragrant and translucent.
  3. Add Seasoning and Thickener

    Stir in your homemade Tuscan spice mix and salt until well combined. Add the tomato paste and flour, stirring continuously to prevent lumps.
  4. Build the Soup Base

    Pour in the broth, stirring frequently to ensure a smooth texture. Let the mixture thicken before adding tortellini, lemon juice, heavy cream, and kale. Stir well to combine.
  5. Simmer and Serve

    Let the soup simmer for 8 minutes until it thickens and the tortellinis are fully cooked and tender. Remove from heat and serve immediately in bowls. Top with freshly grated parmesan and enjoy with a side of bread, if you like.
