Ingredients of Tofu Stuffed Crepes

- 500g tofu, crumbled
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can diced tomatoes
- 1 tbsp tomato paste
- 1 tsp red pepper flakes
- 1 tsp black pepper
- 1 tsp thyme
- Salt
- 1 cup water
- 3 tbsp vegetable oil
Tofu Filling
- 1 ½ cups all-purpose flour
- 1 tbsp cornstarch
- ¼ tsp salt
- 2 tbsp neutral flavored oil (canola, melted refined coconut, or avocado oil)
- 1 cup unsweetened soy milk
- 1 cup sparkling water
Crepe Batter
- 1 tbsp vegan butter
- 4 tbsp vegetable oil
- 2 tbsp all-purpose flour
- 2 cups plant-based milk
- Salt and black pepper to taste
Bechamel Sauce
- Grated vegan cheese

- Sauté and Brown the Tofu

- Season and Simmer

- Mix and Prepare Crepe Batter

- Make the Béchamel Sauce

- Fill and Fold the Crepes
