  • Ingredients of Tofu Stuffed Crepes

Tofu Filling

500g tofu, crumbled
1 onion, diced
2 cloves of garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 can diced tomatoes
1 tbsp tomato paste
1 tsp red pepper flakes
1 tsp black pepper
1 tsp thyme
Salt
1 cup water
3 tbsp vegetable oil

Crepe Batter

1 ½ cups all-purpose flour
1 tbsp cornstarch
¼ tsp salt
2 tbsp neutral flavored oil (canola, melted refined coconut, or avocado oil)
1 cup unsweetened soy milk
1 cup sparkling water

Bechamel Sauce

1 tbsp vegan butter
4 tbsp vegetable oil
2 tbsp all-purpose flour
2 cups plant-based milk
Salt and black pepper to taste

Topping

Grated vegan cheese
  • Method & Directions of Tofu Stuffed Crepes

  1. Sauté and Brown the Tofu

    Crumble tofu and cook in oil until golden for 6 minutes, then add onions and garlic until translucent, followed by the bell peppers, and canned tomatoes.
  2. Season and Simmer

    Now, mix in tomato paste, red pepper flakes, black pepper, thyme, and salt. Then, add water and simmer until the liquid is absorbed.
  3. Mix and Prepare Crepe Batter

    Whisk flour, cornstarch, salt, oil, soy milk, and sparkling water until smooth. Pour batter into a hot, oiled pan, cook both sides until golden brown. Makes about 6 crepes.
  4. Make the Béchamel Sauce

    First, cook the roux by melting vegan butter, adding oil, stirring in flour, and cooking until golden. Then, gradually add plant-based milk, stir until thick, then season with salt and pepper.
  5. Fill and Fold the Crepes

    Place a crepe inside a bowl, stuff it with 2 spoons of the tofu filling and 1 spoon of the béchamel, then fold the sides like a parcel. Then, arrange your filled crepes in a baking dish.
  6. Bake the Stuffed Crepes

    Cover the stuffed crepes with more béchamel, sprinkle vegan cheese, and bake at 180°C until golden.
