Soup Base

¼ cup butter
¼ cup all-purpose flour
1 rib celery, sliced
5 cups broth, chicken or seafood
½ cup white vinegar
2 cups heavy whipping cream
¼ teaspoon dried thyme leaves

Seafood

227 grams white fish (cod, salmon, tilapia, or haddock), cut into chunks
227 grams sea scallops
340 grams medium shrimp, peeled and deveined
184 grams canned clams, drained and chopped

Vegetables

1 medium onion, diced
1 carrot sliced
454 grams potatoes, peeled and cubed
½ cup corn kernels
1 tablespoon chopped fresh parsley

Spice Mix

1 tbsp celery salt
1 tbsp hot paprika
1 tbsp smoked paprika
1 ½ tsp mustard powder
¾ tsp cayenne pepper
½ tsp ground black pepper
½ tsp ground white pepper
¼ tsp ground bay leaves
⅛ tsp ground cinnamon
⅛ tsp ground cloves
⅛ tsp ground nutmeg

  1. Prepare the Spice Mix

    Begin by mixing celery salt, hot paprika, smoked paprika, mustard powder, cayenne pepper, ground black pepper, ground white pepper, ground bay leaves, ground cinnamon, ground cloves, and ground nutmeg. Set the mix aside. This batch will be enough for this recipe and future use.
  2. Sauté the Onion

    Melt butter in a pot over medium heat. Add finely chopped onion and cook until tender and translucent.
  3. Cook the Base

    Sprinkle in the flour, 1 tbsp of your spice mix, and thyme. Stir well and cook for 2-3 minutes, allowing the flavors to develop.
  4. Add Vegetables and Liquids

    Toss in the chopped carrot, celery, cubed potatoes, and corn. Pour in the broth and white vinegar, then bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 10 minutes.
  5. Add Seafood and Cream

    Gently stir in the seafood and cream. Continue cooking until the fish is fully cooked and flaky, and the potatoes are tender, about 8-10 minutes.
  6. Final Touches
