  • Ingredients of Mozzarella Muffins

Butter and Cheese

3 tbsp salted butter
2 garlic cloves, crushed
2 cups grated mozzarella cheese

Dry Ingredients

2 cups all-purpose flour
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt

Wet Ingredients

1 egg, lightly whisked
1 cup milk
¼ cup sour cream (or plain yogurt)
⅓ cup vegetable oil
¼ cup finely chopped fresh parsley
1 garlic clove, crushed

  1. Preheat The Oven

    Set the oven to 180°C.
  2. Melt Butter and Garlic

    Place butter and garlic in a microwave-safe bowl and melt in 30-second intervals. Stir after each burst.
  3. Prepare the Muffin Tin

    Generously butter a 12-hole muffin tin, adding some garlic butter. Reserve a little butter for brushing on top after baking.
  4. Whisk the Dry Ingredients

    In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Whisk the Wet Ingredients

    In another bowl, whisk the egg, milk, sour cream, vegetable oil, chopped parsley, and crushed garlic.
  6. Combine Wet and Dry Ingredients

    Add the wet ingredients to the dry. Stir about 8 times, then fold in cheese with no more than 7 gentle stirs to keep them soft.
  7. Fill the Muffin Tin

    Scoop the batter into 11 muffin tin holes, using an ice cream scoop. The batter should be thick and fill the tin to the top. If it’s ball-shaped, leave it that way.
  8. Bake

    Bake for 22-25 minutes, until golden and springy when touched. Remove from the oven, place on a cooling rack, and brush with the remaining butter. Let cool slightly before serving.
