Libyan Shorba

1 tbsp olive oil
1 medium onion, diced
200 grams lamb meat, boneless, diced into small cubes
1 tsp harissa
1 tsp turmeric
1 tsp sea salt
½ tsp ground pepper, freshly ground
¼ tsp cayenne pepper
2 heaping tbsp of tomato paste
1 can chickpeas
⅓ cup of orzo pasta
1 tsp Libyan spices
2 cloves garlic, minced
¼ cup fresh cilantro, chopped
2 tbsp dried mint

  1. Sauté the Onions

    Heat oil in a pot over medium-high heat. Add the onions and sauté until they turn golden, releasing their natural sweetness and aroma.
  2. Add Spices and Tomato Paste

    Once the onions are golden, stir in turmeric, cayenne, harissa paste, salt, and pepper. Mix well to coat the onions in the spices. Add tomato paste and cook for another 1-2 minutes until the oil turns red, creating a deep, rich base for the dish.
  3. Coat the Lamb in Spices

    Add the lamb to the pot, ensuring it is evenly coated with the spice mixture. Lower the heat to a gentle simmer, allowing the fat from the lamb to release its natural juices. Cover and let it cook undisturbed for 5-7 minutes.
  4. Add Water and Simmer

    Once the meat has released its juices, remove the lid and pour in 1 ½ cups of water. Bring the mixture to a rapid boil, then reduce the heat to a gentle simmer for 10 minutes, allowing the flavors to deepen.
  5. Add Chickpeas and More Water

    Stir in the cooked chickpeas along with 2 ½ more cups of hot water. Let the stew continue to cook for another 15 minutes, allowing the chickpeas to absorb the rich flavors.
  6. Cook the Orzo and Season

    Add the orzo pasta, minced garlic, and Libyan spices. Let everything simmer for 5-7 minutes until the pasta is tender. Stir in chopped parsley or your preferred fresh herb for added freshness.
  7. To make Libyan spice mix, combine1 tbsp ground caraway, 2 tsp ground coriander, 1 tsp turmeric powder, and 1 tsp 7 spice.

  8. Finish with Mint

    For the final touch, take 1 tablespoon of dried mint, rub it between your hands, and let it sprinkle over the soup as a fine powder. Taste and adjust, adding up to 2 tablespoons if desired. Allow the mint to infuse for a few minutes before serving.
