Lamb over rice, cart-style, is a flavorful and hearty dish perfect for Ramadan. Ground, spiced lamb is served on a bed of fragrant rice, seasoned with herbs and spices like cumin and coriander. This satisfying meal is often accompanied by a side of salad or yogurt sauce, making it a balanced and filling option for Iftar.

  • Ingredients of Lamb Over Rice

Rice Layer

3 tbsp ghee
2 cups basmati rice
1 tsp turmeric
1 tsp cardamom
1 tsp paprika
1 tsp cumin
3 cups of stock

Beef Layer

680 grams ground beef
680 grams ground lamb
½ white onion
7 cloves garlic
1 jalapeño
1 tbsp oregano
1 tbsp paprika
2 tsp cumin
1 tbsp salt
1 yellow bell pepper
1 onion

Sauce

¼ cup parsley
½ lemon, juiced
2 tbsp white vinegar
2 cups whole yogurt
Salt to taste
Shredded lettuce and diced tomatoes for topping
  • Method & Directions of Lamb Over Rice

  1. Prepare the Beef

    Blend onion, garlic, and jalapeño in a food processor. Add ground beef and ground lamb and season with oregano, paprika, cumin, and salt. Mix, pushing down the sides to combine well.
  2. For a good flavor and moisture balance, ask your butcher for 80% lean meat and 20% fat ground beef.

  3. Cook the Beef

    In a rectangular baking dish lined with parchment paper, press the beef mixture tightly to remove any air, ensuring it's about 4 centimeters thick. Bake in a preheated oven at 200°C for 30 minutes until fully cooked. Then let rest for at least 30 minutes.
  4. Make the Rice

    Wash your rice and soak it for 15 minutes. In a hot pot, melt the ghee and add turmeric, cardamom, paprika, cumin and toast together. Go in with the strained rice and toast for 5 minutes mixing well. Add stock, bring to a boil, then reduce heat, cover, and cook for 15 minutes until rice is fluffy.
  5. Prepare the Sauce

    While rice is cooking and beef is resting, blend in parsley leaves, lemon juice and vinegar until smooth. Pour into a medium bowl and stir in mayo and yogurt. Season with salt and pepper.
  6. Sizzle Your Beef

    Cube your beef loaf and let sizzle in an oiled hot skillet with 1 thinly sliced yellow pepper and onion until caramelized.
  7. Assemble Your Dish

    Fluff your rice on a large serving plate, and top with the sizzling beef, shredded lettuce, diced tomatoes, and a lot of the sauce.
  8. You can make portioned plates for each person instead of one large plate.
