Iraqi cuisine is filled with delicious meals packed with unique flavors. This is a fried eggplant salad – an all-time favorite salad in Iraqi cuisine. What distinguishes this salad is the fried eggplant and the sweet and tangy dressing.

  • Ingredients of Iraqi Eggplant Salad

Salad

2 large eggplants
½ olive oil
1 medium red pepper, thinly sliced
1 medium green pepper, thinly sliced
2 medium cucumbers, deseeded and sliced
2 medium tomatoes, deseeded and sliced
½ white onion, sliced
⅓ cup chopped parsley
1 tbsp chopped mint

Dressing

2 ½ tbsp ketchup
2 tbsp pomegranate molasses
2 tbsp olive oil
½ tbsp sumac
½ tbsp cumin
½ salt
½ lemon, juiced
  • Method & Directions of Iraqi Eggplant Salad

  1. Prepare Your Eggplants

    Peel the eggplants and slice them thinly (think julienne style). Sprinkle some salt and leave for a few minutes. This will help take out the excess moisture. Before frying, dap them thoroughly with a paper kitchen towel.
  2. Fry the Veggies

    In this recipe, the bell peppers and eggplants are to be fried in olive oil. Start with the bell peppers, and place on a paper towel to absorb the excess oil. After drying your eggplant slices, fry them until golden brown and place them onto a paper kitchen towel.
  3. For best results, fry your veggies in batches depending on the size of your pan.

  4. Prepare the Dressing

    In your salad bowl, mix in the ketchup, pomegranate molasses, olive oil, sumac, cumin, salt, and lemon juice. To that, add in the cucumbers, tomatoes, onion, parsley, and mint.
  5. Assemble the Salad

    Once your fried vegetables are at room temperature, add them to the salad bowl. Mix everything well and enjoy!
