Elbow Pasta Salad

1 box of elbow pasta
1 cucumber
2 red bell peppers
½ a red onion
1 can black beans
1 can corn
½ cup shredded cheddar cheese
1/3 cup plain yogurt
2 tbsp mayo
2 tbsp red vinegar
1 tbsp lime juice
Ranch seasoning to taste
Salt and pepper

  1. Cook the Pasta

    Boil your pasta according to the package instructions.
  2. Make the Salad

    In a large salad bowl, add your finely chopped vegetables including cucumber, red bell peppers, and red onion. Strain the cans of black beans and corn, wash them, and toss them with the veggies. Add the shredded cheddar cheese
  3. Make the Dressing

    In another bowl, mix in the yogurt, mayo, red vinegar, lime juice, ranch seasoning, salt and pepper.
  4. Mix it All

    Mix the vegetables with the cooked pasta and dressing. Enjoy!
