  • Ingredients of Creamy Veggie Pasta

Vegetables

1 yellow bell pepper
1 green bell pepper
1 red bell pepper
2 ½ cups mushroom (185 grams)
1 medium yellow onion, diced
3 tbsp olive oil

Spices

1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1 tbsp cumin
1 tsp salt
1 tsp pepper

Pasta

4 cups penne pasta (400 grams)
1 ½ cups sour cream (345 grams)
3 cups shredded pepper jack cheese
Fresh parsley, chopped for garnish

  1. Prepare the Spice Mix

    In a small bowl, mix in all the spices listed above. You will use it in two batches: one with the veggies, and a second with the pasta later.
  2. Bake the Vegetables

    Thinly slice the bell peppers and dice the onion, then place them in a deep baking dish. Drizzle with olive oil and season with half of the spice mix. Bake in a preheated oven at 200°C for 30 minutes.
  3. Cook the Pasta

    In a large pot, cook the 400 grams of pasta in boiling water according to the package instructions. Drain the pasta and return to the pot, saving 1 cup of pasta water on the side.
  4. Combine Pasta and Vegetables

    Add your baked vegetables to the pasta along with the rest of the spice mix and pasta water. Mix well then add sour cream and mix again.
  5. Bake Your Creamy Veggie Pasta

    Transfer the creamy veggie pasta back to your deep oven dish, even out, and top with shredded cheese. Broil until cheese is golden brown, garnish with parsley and serve.
