  • Ingredients of Chicken Stroganoff with Mashed Potatoes

Mashed Potatoes

3 large potatoes, peeled and cubed
½ full fat milk
50 grams butter
¼ cup shredded mozzarella cheese
1 tsp turmeric
Salt and pepper to taste

Chicken

2 chicken thighs, skinless and boneless
2 tbsp butter
1 tbsp paprika
Salt and Pepper
Mushroom Sauce
1 small red onion, finely chopped
1 garlic clove, crushed
1 pack fresh mushrooms, sliced
1 tbsp flour
⅓ cub hot water
  • Method & Directions of Chicken Stroganoff with Mashed Potatoes

    • 15 Minutes
  1. Cook the Chicken thighs

    In a hot skillet, melt the butter and cook the seasoned boneless chicken with paprika, salt and pepper. This will take 3 minutes for each side or until the chicken is cooked all the way through. Set it aside.
  2. Make the Mushroom Sauce

    In the same skillet, melt more butter and sauté your sliced mushrooms until golden brown. Add the flour, mix well, then stir in with water gradually until you get a thick gravy consistency. Season to taste.
  3. Prepare the Mashed Potatoes

    Boil your peeled and cubed potatoes, then mash them well. While hot, add in the butter, milk and cheese - this will help the butter and cheese to melt and blend through. Season with salt, pepper and turmeric.
  4. Assemble Your Dish

    Spread your mashed potatoes, slice your chicken and place it on top, then drizzle some of the creamy mushroom sauce.
