Combo foods have been all range in the last few months. One of the most viral combos is Brookies: a combination of brownies and cookies. In a nutshell, you will make two batters for this recipe, layer them in a baking dish or oven tray, bake, and serve. Everyone will love this super rich and sweet dessert after Iftar.

  • Ingredients of Brookies

Cookie Batter

1 cup butter, melted
½ brown sugar
⅓ granulated sugar
1 egg
1 tsp vanilla extract
1 ¼ cup flour
1 tsp baking soda
1 semisweet chocolate chips

Brownie Batter

1 cup butter, melted
½ unsweetened cup cocoa powder
100 grams melted chocolate
½ cup granulated sugar
½ brown sugar
3 eggs
1 tsp vanilla extract
½ flour
1 tbsp baking powder
½ tsp salt
1 cup chocolate chips

  1. Prepare the Cookie Batter

    In a large mixing bowl, cream together the butter and both sugars until light and fluffy. Add the egg and vanilla extract, then whisk until well combined. Gradually incorporate the flour and baking soda, mixing them into the wet ingredients. Finally, fold in the semisweet chocolate chips until evenly distributed throughout the batter.
  2. Make the Brownie Batter

    In a mixing bowl, combine the melted butter, cocoa powder, and 100 grams of melted chocolate, whisking until smooth. In a separate bowl, whisk together both sugars, eggs, and vanilla extract until light and creamy. Gradually mix in the flour, baking powder, and salt, then gently fold in the chocolate chips until well incorporated.
  3. Prepare to Bake

    In a greased oven tray lined with parchment paper, spread half of the brownie batter, followed by half of the cookie batter. Then, pour the remaining brownie batter on top and finish with the second half of the cookie batter.
  4. Bake

    Preheat your oven to 180 degrees and bake your Brookie tray for 45 minutes. Let it cool and serve!
