3 cups uncooked sushi rice
80 ml seasoned rice vinegar for sushi
1/2 lb sashimi grade tuna thinly sliced
1/2 lb sashimi grade salmon thinly sliced
2 Persian cucumbers thinly sliced
1 small watermelon radish thinly sliced
1/2 cup roasted white sesame seeds
1/2 cup roasted black sesame seeds
6 oz masago eggs
any other toppings of your choice avocado, other sashimi, etc
4 full sized sheets of roasted seaweed for sushi making

  1. Rinsing and Cooking the Rice

    Rinse the rice with water until it runs mostly clear, then drain in a colander and let it dry for 15 minutes. Transfer the rice to a rice cooker, add water up to the 3-cup line, and cook according to the manufacturer's instructions.
  2. Seasoning and Cooling the Rice

    Once the rice is cooked, transfer it to a large bowl to cool quickly. While still hot, pour sushi vinegar over the rice and use a rice paddle to mix it in, making diagonal slashes through the rice to help cool it evenly. Repeat until the rice is cooled and seasoned evenly.

    Place a piece of plastic wrap over each donut mold cavity, ensuring it extends over the edges. Add about 1/2 cup of sushi rice on top of the plastic wrap, then use the wrap to press and shape the rice into the mold cavity.
