2 cups cracked freekeh
2 tablespoons extra-virgin olive oil
1 medium onion diced
1 teaspoon salt
¼ teaspoon black pepper
3 cups water

2 tablespoons extra virgin olive oil divided
½ cup blanched almonds
1.5-2 pounds boneless skinless chicken breast or thighs
Salt and pepper to taste
1 teaspoon 7 spice or cinnamon

    Start by picking over the freekeh to remove any debris, then rinse it thoroughly in cold water until the water runs clear. Soak the freekeh in cold water for 30 minutes, then drain and set aside.
  2. Sauté the Onions and Combine with Freekeh

    In a heavy-bottomed skillet or Dutch oven, heat olive oil over medium heat. Add chopped onions and cook until they turn golden brown, about 5 to 10 minutes. Transfer the soaked freekeh over the cooked onions, and season with salt and pepper.
