Crispy Fried Feta & Eggs

¼ cup crumbled feta cheese
1 tablespoon harissa or pesto
1 large egg
1 tablespoon chopped fresh dill or basil
Avocado cooking oil spray
1 small tortilla

  1. Melting the Feta

    Heat a small skillet over medium heat and add the feta cheese around the outside circle of the pan. Allow the feta cheese to melt for 2-3 minutes until it forms a golden brown crust.
  2. Cooking the Eggs

    Add the harissa or pesto in the middle of the pan and gently crack an egg in the center over the harissa. Let the egg cook to your liking for 3-5 minutes until the whites are set and the yolk is still runny.
  3. Finishing Touches and Serving

    Once the egg is cooked and the cheese has formed a golden brown crust, sprinkle with fresh dill or basil. Carefully remove from the pan with a spatula and set on a plate. In the same skillet, spray cooking oil and add the tortilla, cooking until lightly golden on each side for 1-2 minutes. Slide the crispy feta and eggs on top of the tortilla and serve immediately for a delicious and satisfying meal.
