  • Ingredients of Saudi Saleeg

Chicken

2 tbsp ghee
1 bay leave
4 cardamom pods
1 stick of cinnamon
1 chopped onion
1 kg chicken (thighs, breasts, or both)

Rice

5 cups of water
2 cups basmati rice
5 to 6 cups of milk
2 heaping spoons of cream (preferably canned)

  1. Sear the Chicken

    In a large pot, heat the ghee and add the bay leaf, cardamom pods, cinnamon stick, and chopped onion. Sear the chicken until it develops a nice golden color.
  2. Boil the Chicken

    Pour in 5 cups of water, add salt, bring to a boil, and cook for about 30 minutes or until the chicken is super tender.
  3. Grill the Chicken

    Once cooked, remove the chicken from the pot and transfer it to a baking tray. Brush it with some more ghee and grill it in the oven until the skin turns crispy and golden brown.
  4. Strain the Stock

    Using a fine sieve, strain the stock to remove the onion and aromatics, keeping only the flavorful broth.
  5. Cook the Rice

    Wash 2 cups of basmati rice thoroughly. Add the rice to the strained stock and bring it to a boil. Reduce the heat to a simmer and allow the rice to absorb the stock (about 10-15 minutes).
  6. Add the Milk and Cream

    Once the rice is nearly dry, pour in 4 cups of milk (the milk should be at least 2 cm or half an index finger above the rice). Add the cream and season with salt and pepper.
  7. Stir and Adjust Consistency

    Keep stirring the mixture often on medium heat for 10 minutes, allowing the rice to break down and absorb the milk. Also, this will prevent the milk from burning.
  8. If the mixture thickens too much and the rice is not fully soft, add 1 more cup of milk and continue cooking until the rice is super soft and tender.

  9. Final Texture & Serving

    The consistency should be slightly loose – like a risotto, as it will thicken more when cooled. Serve the creamy rice on a flat plate, topped with the crispy grilled chicken. Drizzle with ghee for extra flavor and enjoy!
