Mango Sticky Rice

2 cups water
1 ½ cups uncooked glutinous sticky white rice, rinsed
2 cups coconut milk
1 cup white sugar
¾ tsp salt
1 tbsp white sugar
1 tsp tapioca starch
3 mangos, peeled and sliced
1 tbsp toasted sesame seeds

  1. Cook the Rice

    In a pan over medium-high, combine rice and water, bring to a boil then cover, reduce heat, and let simmer for 15 to 20 minutes.
  2. Make the Sauce

    In another pan, 1 ½ cups of coconut milk, 1 cup sugar, and ½ teaspoon of salt together. Bring to a boil then remove from heat and set aside.
  3. Make the Sticky Rice

    When the rice is cooked, stir it into the coconut milk mixture. Cover and let cool for 1 hour.
  4. Prepare the Topping Sauce

    Mix the remaining ½ cup of coconut milk with 1 tablespoon sugar, ¼ teaspoon salt, and tapioca starch. Transfer to medium-high heat and bring to a boil until it thickens.
  5. Assemble

    Place the sticky coconut rice in a service dish, arrange sliced mangos on top, and top with the sauce and some toasted sesame seeds. Enjoy!
