Homemade Pita Bread

¾ cup warm water
1 package active dry yeast, about 2 ¼ tsp
1 tsp plus 1 tbsp sugar
3 ¾ cups bread flour, about 469 grams plus more for dusting
1 ½ tsp sea salt
3 tbsp extra-virgin olive oil, plus more for the bowl
¾ cup Greek yogurt

    In a medium bowl, combine the water, yeast, and 1 teaspoon of sugar. Allow the mixture to sit for about 5 minutes, or until it becomes foamy on top, signaling that the yeast is activated.
  2. Prepare the Dough

    In a large mixing bowl or stand mixer fitted with a paddle attachment, combine the flour, salt, and the remaining tablespoon of sugar. Add the yeast mixture, oil, and yogurt, and mix to combine. Knead the dough for 7 to 10 minutes until it is soft and slightly sticky, adding more flour if needed. Once kneaded, transfer the dough to an oiled bowl, cover with a towel or plastic wrap, and let it rise for about 2 hours, or until it has doubled in size.
  3. Preheat the Oven

    Preheat your oven to 260°C and line two baking sheets with parchment paper, ready for the pita dough.
  4. Shape and Let the Dough Rise

    Turn the dough out onto a clean work surface and divide it into 12 equal balls. Cover the balls with a towel and let them rise for an additional 20 minutes.
  5. Roll and Bake the Pitas

    nto the prepared baking sheets, ensuring they are an inch apart. Bake them one sheet at a time, checking at 5 minutes. Bake for about 8 minutes, rotating the pan after the 5-minute mark if one side is puffing up more than the other. Once golden and puffy, transfer the pitas to a wire rack to cool.
