Homemade Ashta (Cream)

1 cup (237ml) whipping cream
½ cup (118ml) whole milk
2 tbsp (15g) all-purpose flour
2 tbsp (14g) cornstarch
1 tsp granulated sugar
Optional flavoring such as rose or orange blossom water, vanilla or ground mastic

  1. Mix the Ingredients

    In a medium saucepan, before turning on the heat, whisk together the whipping cream, milk, flour, cornstarch, and sugar. Continue whisking until everything is fully combined and no lumps remain. The flour and cornstarch should dissolve completely for a smooth texture.
  2. Cook the Mixture

    Place the saucepan over medium-high heat and whisk constantly as it heats up. Once large bubbles start forming on the surface and the mixture reaches a full boil, let it cook for another 30 seconds. The texture should become very thick. At this point, add any flavoring of your choice or leave it plain.
  3. Cool and Set

    Pour the thickened Ashta into a bowl and press a sheet of plastic wrap directly onto the surface to prevent a skin from forming. Place it in the refrigerator and let it chill until fully set, which takes at least one hour. It can be stored this way for up to three days.
  4. Prepare for Use

    When ready to use, stir the Ashta with a spoon to loosen it. For a smoother and softer consistency, blend it quickly until silky.
  5. Store the Ashta

    Keep the Ashta well-covered in the refrigerator for up to three days. Since it does not freeze well, it is best to make a fresh batch as needed.
