  • Ingredients of Hidden Veggie Pasta

Roasted Vegetables

1 cup (145 grams) Cherry Tomatoes
2 medium bell peppers
1 cup (100 grams) mushrooms, quartered
½ medium zucchini
1 onion
1 head of garlic, top trimmed
2 tbsp olive oil
1 tbsp Italian seasoning
Salt and black pepper to taste

Sauce

2 tbsp vegan cream cheese
1 tbsp tomato paste
1 handful fresh basil

Pasta

2 ½ cups pasta
2 tbsp reserved pasta water

Garnish

Fresh basil leaves
Chili flakes to taste (optional)

    • 30 Minutes
  1. Roast the Vegetables

    Arrange cherry tomatoes, bell peppers, mushrooms, zucchini, onion, and garlic on a baking sheet, and coat with olive oil, Italian seasoning, salt, and pepper. Bake at 220°C for 25 - 30 minutes.
  2. Blend the Sauce

    Squeeze the roasted garlic into a blender, add roasted veggies, vegan cream cheese, tomato paste, and basil, then blend until smooth.
  3. Cook the Pasta

    Boil pasta until al dente, reserving some pasta water before draining.
  4. Combine and Serve

    Heat the sauce in a pan, toss with pasta, and adjust consistency with reserved pasta water. Cook for another 2 to 3 minutes.
  5. Garnish and Enjoy

    Finally, top with fresh basil and chili flakes. Serve hot and enjoy!
