Ramadan Recipe: Easy Harak Osbao

Harak Osbao is a traditional Syrian dish, often served during Ramadan for Iftar. This hearty, flavorful stew combines lentils, and with onions, garlic, and a blend of aromatic spices like cumin and coriander. The dish is rich in protein and fiber, making it a perfect choice to break the fast, providing energy and warmth. Topped with a drizzle of lemon juice and served with a side of bread, Harak Osbao is a comforting and nutritious meal during the holy month. Originally, this dish is made with dough boiled in water. However, this recipe uses crushed Fettuccine pasta to make it easier.

Harak Osbao

2 cups Fettuccine pasta, crushed
1 cup brown lentils
5 garlic cloves, crushed
¾ cup fresh cilantro, chopped
3 tbsp pomegranate molasses
2 tbsp tamarind molasses
1 tbsp cumin
Salt and pepper to taste
1 large onion, sliced
1 tbsp flour
1 cup pomegranate seeds
1 cup fried pita bread
  • Method & Directions of Harak Osbao

    • 25 Minutes
  1. Cook the Pasta and Lentils

    In a large pot, boil 3 cups of water and cook the pasta in it. Halfway through, add your dry lentils and let cook with the pasta.
  2. Add the Seasonings

    Season your pasta and lentils with pomegranate molasses, tamarind molasses, cumin, salt, and pepper. Let it simmer until the water thickens.
  3. You need a thick soup-like texture, so add more water if need be. If it's too runny, let it simmer more.

  4. Fry the Onions

    Slice your onion and coat it with flour then shallow fry until crispy and golden brown. Add a bunch of fried onions to the pasta and lentils.
  5. Sauté Garlic and Cilantro

    In 2 tablespoons of oil, sauté the garlic and cilantro together. Make sure your garlic does not get brown colored. Add 2 tablespoons of sauteed garlic and cilantro to your seasoned pasta and lentils.
  6. Assemble and Serve

    In a serving dish, pour your Harak Osbao and garnish with the remaining fried onion, garlic cilantro, pomegranate seeds, and fried pita bread. Serve warm and enjoy!
