  • Ingredients of Easy Baked Beef Stew

Stew

3 potatoes
2 carrots
1 onion
2 bell peppers
3 tomatoes
1 jalapeno (optional)
5 garlic cloves
1 kilo stew meat, boneless and cubed
3 small bay leaves

Sauce

2 tbsp olive oil
1 ½ tsp salt
½ tsp black pepper
½ tsp crushed red pepper
1 tsp garlic powder
1 tsp onion powder
½ tsp cardamom powder
1 tsp oregano
½ tomato paste
¼ tomato sauce
2 cups water

  1. Dice and Assemble

    In a large casserole dish or oven tray, toss your diced potatoes, carrots, onion, jalapeno, tomatoes, and bell peppers. Add the whole garlic cloves and stew meat to the dish. Top with the bay leaves and set aside to make the sauce.
  2. Prepare the Sauce

    In a large cup or bowl, whisk in the olive oil, salt, black pepper, crushed red pepper, garlic powder, onion powder, oregano, cardamom, tomato paste, tomato sauce, and water. Pour over the veggies and meat.
  3. Bake

    Cover your dish with a piece of parchment paper and aluminum foil and bake in a preheated oven at 200 Celsius degrees for 1 hour and 30 minutes until the meat is fork-tender and the veggies are cooked through.

    4. You can serve this oven-baked beef stew with a side of pasta or rice.
