Crepe Batter

1 ½ cups whole milk
4 large eggs
1 cup all-purpose flour, (spooned and leveled)
1 tbsp sugar
¼ tsp salt
3 tbsp unsalted butter, melted - plus more for pan
3 tbsp unsweetened cocoa powder

Cookies and Cream Filling

1 ½ cup whipped cream
16 Oreos, crushed

  1. Mix the Crepe Batter

    First, add milk, eggs, flour, sugar, salt, and cocoa powder to a blender. Blend until smooth, scraping the sides to remove lumps. Melt butter in a pan, let it cool slightly, then mix it into the batter.
  2. Let the Batter Rest

    The key to a perfect crepe batter is to let it rest for at least 15 minutes. So, transfer to a lidded container, cover, and refrigerate.
  3. Make the Crepes

    Gently stir the crepe batter before using it, then scoop about ¼ cups (more or less, depending on your pan). Swirl it around to create a thin, paper-like crepe. Repeat until you run out of batter and set aside to cool.
  4. Prepare the Filling

    In a large bowl, whip the cream until fluffy, adding sugar if desired. Crush Oreos in a bag, then sprinkle them over the cream. Gently fold them in without overmixing to keep the whipped cream light and airy.
  5. Make the Rolls

    Now, it's time to make the roll cake! Lay 3 crepes (or more if needed) on a flat surface, slightly overlapping. Spread the cookies and cream filling evenly, fold in the edges (the cream helps hold it together), and roll it up tightly like a burrito. Slice and enjoy!
