Dressing

6 anchovy fillets
4 cloves garlic, finely chopped
1 lemon, juiced
4 tbsp red vinegar
2 large egg yolks
2 tbsp Dijon mustard
2 dashes Worcestershire sauce
½ cup olive oil
Salt and ground black pepper to taste

Salad

1 head romaine lettuce, chopped
½ cup grated Parmesan cheese
4 tablespoons croutons

  1. Prepare the Dressing

    Mash the anchovy fillets and garlic in a large salad bowl. Add the lemon juice, red vinegar, Dijon mustard, egg yolk, and Worcestershire sauce. Whisk until smooth and creamy.
  2. Add Olive Oil

    Slowly stream in the olive oil while whisking continuously. Season with salt and black pepper to taste.
  3. Assemble the Salad
