  • Ingredients of Chicken Bukhari

Bukhari Rice

1 cup oil
2 carrots, julienned
½ cup black raisins
1 onion, sliced
1 whole chicken, cut into pieces, skin on
2 medium tomatoes, crushed
2 tsp tomato paste
2 cups basmati rice, washed and drained
3 ½ cups water
2 green chili peppers
Salt and pepper, to taste
1 tsp cumin

Duggus Sauce

1 bunch coriander
2 garlic cloves
4 Tomatoes
2 green chilis
Salt and pepper, to taste
1 lemon, juiced
  • Method & Directions of Chicken Bukhari

  1. Prepare the Carrots and Raisins

    Heat oil in a pan over medium heat. Add the carrots and raisins, frying them for about 3 to 5 minutes until they turn golden and slightly crispy. Remove from the pan, drain any excess oil, and set them aside for garnishing later.
  2. Fry the Onions and Chicken

    In the same pan, add sliced onions and fry until they become golden brown. Next, place the chicken pieces skin-side down and fry for 2 to 3 minutes until they develop a slight golden color.
  3. Cook the Tomato Base

    Pour in the crushed tomatoes and stir in the tomato paste. Let the mixture simmer and reduce for 5 to 10 minutes, allowing the flavors to meld together. Once thickened, remove the chicken and transfer it to a baking tray. Place the tray in the oven and let the chicken roast until it is fully golden and crisp.
  4. Cook the Rice

    Add 2 cups of basmati rice to the same pot, then pour in 3½ cups (750 ml) of water. Bring the mixture to a boil before reducing it to the lowest heat setting. Add two whole green chili peppers for extra aroma. Let the rice simmer for 30 to 45 minutes until all the water is absorbed and the grains are perfectly tender.
  5. Garnish and Serve

    Once the rice is cooked, garnish it with fried carrots, raisins, and fresh parsley. Serve warm and enjoy this flavorful dish.

    In a blender, combine fresh coriander, tomatoes, garlic, and green chili peppers. Blend the ingredients until you achieve a thick, smooth consistency. Season with salt, pepper, and a squeeze of lemon juice for a fresh, tangy flavor. Serve this spicy salsa alongside the Bukhari rice for an added kick.
