Tahini Cauliflower Casserole

1 head cauliflower, chopped into florets
500 grams ground beef
1 onion, finely chopped
1 cup tahini
1 cup water
½ cup lemon juice
1 garlic clove, minced
1 tsp salt
1 tsp black pepper
2 tbsp olive oil

  1. Preheat the Oven

    First, preheat your oven to 180°C to ensure it's ready for baking.
  2. Prepare the Cauliflower

    Chop the cauliflower into equal-sized florets. Sauté in 1 tbsp olive oil over medium heat until slightly softened.
  3. Cook the Beef

    Now, finely chop the onion and sauté it in 1 tbsp olive oil until translucent. Add the ground beef and cook until fully browned.
  4. Make the Tahini Sauce

    In a bowl, mix tahini, water, lemon juice, garlic, salt, and pepper until smooth. Adjust the consistency; it's okay if it's slightly runny as it will thicken while baking.
  5. Assemble and Bake

    In a baking dish, layer the sautéed cauliflower florets first, then the cooked beef. Pour the tahini sauce evenly over the top. Bake for 25–30 minutes or until the top is golden brown.
