These crispy, golden bites are made by coating tender cauliflower florets in a spiced batter infused with parsley, garlic, and warm spices before deep-frying them to perfection. Served hot, they make a flavorful appetizer or side dish that pairs beautifully with tahini sauce or a squeeze of lemon for a zesty touch.

Cauliflower Fritters

1 head cauliflower, cut into large florets
3 eggs
2 cups parsley, chopped
2 cups flour
1 onion, finely chopped
2 garlic cloves, minced
1 tbsp curry powder
1 tbsp allspice
1 tsp salt, adjust to taste
½ cup vegetable oil

  1. Boil the Cauliflower

    Start by cutting the cauliflower into large florets and boiling them in salted water until they are tender but not mushy. Drain well and set aside.
  2. Make the Batter

    In a mixing bowl, whisk together the eggs and flour until smooth. Add the chopped parsley, minced garlic, curry powder, salt, and allspice. Mix until well combined to create a flavorful batter.
  3. Coat the Cauliflower

    Add the boiled cauliflower florets to the batter and gently toss to ensure they are evenly coated.
  4. Fry Until Golden

    Heat vegetable oil in a deep pan over medium heat. Carefully drop the coated cauliflower florets into the hot oil and fry until golden brown on all sides. Remove and place on a paper towel to drain excess oil.
