Dough

4 cups fine semolina
1 cup flour
1 ½ cups ghee
½ cup powdered sugar
1 tsp Maamoul spice
½ tsp ground Mahaleb
5 ground mastic stones
3 tbsp orange blossom water
1 ½ cups milk
½ instant yeast

Filling

500 grams date paste
1 tsp cinnamon powder
1 tsp cardamom powder
½ tsp nutmeg
3 tsp butter

  1. Make the Dough

    Melt the ghee and let it cool to room temperature. In a large bowl, mix semolina and flour, then add the cooled ghee. Rub the mixture together by hand until well combined, then let it rest for 10 minutes.
  2. Add the Flavor

    Once rested, mix in the powdered sugar, Maamoul spice, and Mahaleb. For the ground mastic stones, crush them with a pinch of sugar before adding to ensure they blend smoothly into the dough. Stir instant yeast into warm milk and gradually pour it over the dry ingredients, mixing until a smooth dough forms. Let it rest for 5 more minutes.
  3. Prepare the Filling

    In a separate bowl, combine date paste, cinnamon, cardamom, nutmeg, and butter. Mix well until soft and pliable, then roll the mixture into small balls, about 1 teaspoon each. Set them aside for assembly.
  4. Shape the Maamoul

    Scoop about 1 tablespoon of dough and flatten it in the palm of your hand. Place a date ball in the center, then carefully wrap and seal the dough around the filling. Shape it into a smooth round or use a Maamoul mold for traditional designs.
  5. Bake the Maamoul

    Preheat the oven to 200°C. Arrange the Maamoul on a lined baking tray, leaving space between each piece. Bake for 12-15 minutes or until the edges turn golden.
  6. Finishing Touches

    Let the Maamoul cool completely before dusting with powdered sugar. Serve with Arabic coffee and enjoy!
