Easy Qatayef Recipe (Arabic Pancakes) Ramadan Favorite!

A Ramadan Favorite!

Qatayef is a beloved Middle Eastern dessert, especially popular during Ramadan. These delicious stuffed pancakes are a staple at Iftar tables, bringing families together with their crispy golden shell and sweet, flavorful fillings. Whether filled with cheese, nuts, or even cream, Qatayef perfectly complements the spirit of sharing and celebration in Ramadan.

Ingredients:

For the Batter:
  • 2 cups all-purpose flour
  • 1 ½ cups warm water
  • 1 tbsp sugar
  • 1 tsp instant yeast
  • 1 tsp baking powder
  • ¼ tsp salt
For the Filling:

🔹 Cheese Filling:

  • 1 cup Akkawi cheese (soaked to remove salt) or mozzarella
  • 1 tsp orange blossom water (optional)

🔹 Walnut Filling:

  • 1 cup walnuts, chopped
  • 1 tbsp sugar
  • ½ tsp cinnamon
For the Syrup (Qater):
  • 1 cup sugar
  • ½ cup water
  • ½ tsp lemon juice
  • 1 tsp orange blossom or rose water (optional)
  • You can also skip this step and use Honey or Maple Syrup

Instructions:

1. Prepare the Batter:

  1. In a bowl, mix warm water, sugar, and yeast. Let it sit for 5 minutes until foamy.
  2. Add flour, baking powder, and salt, then mix well until smooth.
  3. Cover and let it rest for 30 minutes until bubbles form.

2. Make the Syrup:

  1. In a saucepan, mix sugar and water, and bring to a boil.
  2. Add lemon juice and simmer for 5 minutes.
  3. Remove from heat and add orange blossom water. Let it cool.

3. Cook the Qatayef:

  1. Heat a non-stick pan over medium heat. Pour a tablespoon of batter to form a small pancake.
  2. Cook until bubbles form and the top dries out (do not flip).
  3. Remove and place them on a clean towel, covering them to keep them soft.

4. Fill the Qatayef:

  1. Add 1 tsp of cheese or walnut filling in the center.
  2. Fold in half and pinch the edges tightly to seal.

5. Fry or Bake:

To Fry: Heat oil and fry until golden brown, then dip in cooled syrup for a few seconds.
To Bake: Brush with butter or oil and bake at 350°F (180°C) until golden and crisp.

6. Serve & Enjoy!

Drizzle extra syrup, sprinkle crushed pistachios, and enjoy warm!
