Celebrate Saudi National Day With This Tharid Recipe

Tharid is the Arabian Gulf version of the Levantine fatteh, made with a lot more bread and topped with a hearty meat and vegetable stew. It is very popular in Saudi Arabia.

Tharid is enjoyed in two ways - either by dipping the bread in the meat or vegetable broth or by stacking and soaking the bread in the broth and eating it as is.

Tharid

500g mutton
7 fresh bread loaves - shredded
1 bay leaf
2 cardamom pods
2 cinnamon sticks
2 garlic cloves
1 dry lemon
1 big onion - cubed
1 tbsp ginger garlic paste
2 green chilli
1 big tomato - cubed
1 cup potato - cubed
1 cup carrot - cubed
1 cup eggplant - cubed
1 cup zucchini - cubed
1 tbsp paprika powder
1 tsp cumin powder
1/2 tsp turmeric powder
1 tsp pepper powder
2 tbsp tomato paste
salt to taste
coriander leaves - a handful
3 tbsp oil
3 tbsp ghee
boiling water - as required
  • Method & Directions

  1. Prepare the flavorful base

    Heat a mixture of oil and ghee in a pan, then add the whole spices and stir for one minute. After that, add the chopped onion, ginger garlic paste and green chilies, and cook for around 5 minutes. Finally, include the chopped tomato and continue to cook until it becomes soft and pulpy.
  2. Spice and cook the meat

    Add all the required spice powders, salt, tomato paste and dry lemon to the pan and stir well. Cook for 2 to 3 minutes, then add the mutton and mix it until the spices coat the meat well. Pour enough boiling water into the pan, cover it and let it cook until the mutton becomes soft and tender. Finally, add chopped coriander leaves and mix everything together.
  3. Add the vegetables

    Add the vegetables to the pan and cook for an additional 5 minutes. Be careful not to overcook the vegetables, as they should remain crunchy. Check the seasoning and adjust the salt as needed.
  4. Add the bread

    Add the shredded bread to the pan and mix it well with the other ingredients. Cover the pan and let it cook on low heat until the gravy thickens and the bread is well-soaked but not soupy.
  5. Serve

    Arrange the meat and vegetables over the bread and serve immediately.
