Syrup

1 cup sugar
1 cup water

Tar Halva

1 cup semolina
1/2 cup unsalted butter
1/4 cup blanched almonds, chopped
1/4 cup pistachios, chopped
1/4 cup desiccated coconut
1/2 teaspoon ground cardamom
1/4 teaspoon saffron threads (optional)
Rose water or orange blossom water (for garnish)

  1. Prepare the Syrup

    In a saucepan, combine the sugar and water, and bring to a gentle boil over medium heat. Stir until the sugar dissolves completely, then reduce the heat and let the syrup simmer for about 5 minutes until slightly thickened.
  2. Toast the Semolina

    In a separate large skillet or frying pan, melt the unsalted butter over medium heat. Add the semolina to the skillet and toast it gently, stirring constantly, until it turns golden brown and releases a nutty aroma. This should take about 5-7 minutes.
  3. Combine Semolina with Syrup

    Pour the prepared sugar syrup into the skillet with the toasted semolina, stirring continuously to prevent lumps from forming. Cook the mixture over low heat, stirring constantly, until it thickens and begins to pull away from the sides of the pan. This usually takes about 10-15 minutes.
  4. Add Flavor and Texture

    Once the semolina mixture reaches a thick, pudding-like consistency, add the chopped almonds, pistachios, desiccated coconut, ground cardamom, and saffron threads (if using). Stir well.
  5. Shape and Serve

    Remove the skillet from the heat and transfer the Tar Halva mixture to a greased baking dish or mold. Use a spatula or the back of a spoon to press the mixture evenly into the dish and smooth the surface. Allow the halva to cool and set at room temperature for about 30 minutes to an hour.
