Tandoori Chicken

2 lbs chicken thighs
1 cup full fat yogurt
1 lemon
1 clove garlic, minced
1-inch piece of ginger
1 teaspoon coriander
1 teaspoon cumin
1 teaspoon turmeric
1 tablespoon garam masala
1 teaspoon cayenne pepper
1 tsp salt
½ tsp ground black pepper
2 tbs butter

Optional Ingredients

1 tsp red food coloring
Fresh cilantro for serving
Lemon slices for serving
Rice for serving
1 teaspoon garlic powder (if you don't have fresh garlic on hand)
1 teaspoon ground ginger (if you don't have fresh ginger on hand)

  1. Marinate the Chicken

    In a large bowl, combine yogurt, spices, salt, pepper, garlic, ginger, and optional food coloring. Mix thoroughly to create a flavorful marinade.
  2. Prep and Marinate the Chicken

    Make deep slits in the chicken using a knife. Add the chicken to the prepared marinade, ensuring all pieces are well-coated. Cover the bowl and refrigerate for at least 2 hours, up to overnight.
  3. Bake and Serve

    Preheat the oven to 400°F. Place the marinated chicken on a rack over a foil-covered baking sheet. Bake for 15 minutes, then brush with half of the melted butter. Bake for an additional 15 minutes. Turn the chicken pieces, brush with the remaining butter, and bake for another 15 minutes (45 minutes total). Serve the delicious Tandoori Chicken sprinkled with fresh cilantro and accompanied by lemon slices.
