Shirazi salad is a staple of every Iranian meal. It's as simple as can be, but the flavor and texture are spot on. What makes this salad a cut above the rest are the herbs and spices that go into the dressing.

- 3 Roma tomatoes - small diced
- 4 small Persian cucumbers - small diced
- ¼ to ½ cup finely chopped onions
- ½ green bell pepper - chopped into small pieces
- 2 to 3 tbsps chopped fresh parsley
- 2 to 3 tbsps chopped cilantro
- 2 to 3 tbsps chopped dill
- 1 tbsp dried mint (or ½ cup chopped fresh mint)
- Salt and pepper, to taste
- Sumac, to taste
- Juice of 2 large limes
- 3 tbsps extra virgin olive oil

- Add the herbs and spices
