Ramadan Recipes: Shakshuka

Shakshuka is a Maghrebi meal of poached eggs in a simmering tomato sauce with olive oil, peppers, onion, and garlic, as well as spices such as cumin, paprika, and cayenne pepper.

- 1 large chopped onion
- 1 green bell pepper
- 2 minced garlic cloves
- 2 teaspoon paprika
- 1 teaspoon cumin
- ¼ teaspoon red pepper flakes or cayenne pepper
- 6 medium tomatoes
- ½ cup of tomato sauce
- 6 large eggs
- salt and pepper to taste
- fresh cilantro and fresh parsley to garnish

- Make the shakshuka tomato sauce
تم نسخ الرابطHeat olive oil in a large sauté pan over medium heat, add the chopped bell pepper and onion, salt, black pepper, paprika, cumin, and pepper flakes and cook for about 5 minutes until the onion becomes translucent, then add the diced tomato and tomato sauce, and bring the sauce to a simmer for about 15 minutes until thickened.
