Ramadan Recipes: Minestrone Soup

Minestrone soup is a quick and nutritious Italian dish made with veggies, beans, zucchini, and fresh basil which can also be made vegan or gluten-free.
Follow the easy recipe to have this filling soup for iftar or dinner during Ramadan.

- 1 large Medium onion
- 1/4 kg green beans
- 2 Stalks of Diced Celery
- 1/2 carrot
- 3 Tbspn Extra-Virgin Olive Oil
- 1 tsp dried basil
- 3-4 cloves of minced garlic
- 1 and 1/2 tsp Oregano
- Salt and Pepper
- 2 tbsp of fresh chopped basil
- 3-5 Tomatoes Diced
- 4-5 Cups of Chicken/ Vegetable broth
- 1/3 cup finely grated parmesan cheese
- Kidney beans
- 1 cup small pasta

تم نسخ الرابطOver medium-high heat, warm the olive oil in a large pan. Add the onion and cook for approximately 4 minutes, or until transparent. 30 seconds later, add the garlic. Cook the celery and carrot after adding them for about 5 minutes, or until they begin to soften. Cook for 3 more minutes after adding the green beans, dried oregano, dry basil, and 3/4 teaspoon salt.

تم نسخ الرابطBring the chicken stock, chopped and crushed tomatoes, and other ingredients to a boil in the large pan. Boil for ten minutes on medium-low heat. Add the pasta and the veggies. After adding the pasta and veggies, stir in the kidney beans and cook for approximately 10 minutes, or until the pasta is soft. Use salt to season. Pour it into a bowl and garnish with basil leaves and parmesan cheese. Your Minestrone soup is ready!
