Ramadan Recipes: Lemon Pasta

A lemon pasta dish with spaghetti and a lemon-cream sauce topped with strips of lemon zest. This recipe is luscious and amply cheesy, but bright thanks to fresh lemon juice and zest.

Lemon Pasta

12 ounces (340g) spaghetti
2 garlic cloves, thinly sliced
Zest and juice of 1 lemon
6 tablespoons unsalted butter
Salt and black pepper, to taste
1 cup grated Parmesan cheese
Fresh basil, to garnish

  1. Cook the pasta

    Place the pasta in a pot of salted water to a boil and cook it for about 10 minutes, rinse with cold water, drain, and set aside. Reserve about 1 cup of the starchy pasta water.
  2. Prepare the sauce

    Melt butter over medium heat in a large skillet until foaming, then lower heat to low, add lemon zest and garlic, and stir for 1 to 2 minutes.
  3. Transfer pasta to the skillet

    Add pasta to butter mixture, along with 1 cup of pasta water, and toss the pasta over medium-high heat until pasta is well coated with the sauce.
  4. Add cheese

    Add grated Parmesan cheese and toss until the sauce thickens, then add lemon juice to taste, season with salt and black pepper.
  5. Serve

    Serve spaghetti right away, topping each serving with additional grated lemon zest and cheese, and garnish with fresh basil.
