Ramadan Recipes: Lemon Chicken

As the name suggests, lemon chicken usually consists of pieces of chicken that are sautéed or deep-fried and coated with a buttery garlic lemon sauce that adds so much flavor to the chicken.

Lemon chicken

4 boneless chicken breasts, skin on
salt and black pepper to taste
3 tablespoons olive oil
1 clove garlic, minced
1 tablespoon thyme
1 teaspoon rosemary

Lemon butter sauce

¼ cup fresh lemon juice
3 tablespoons melted butter
2 tablespoons flour
½ lemon, thinly sliced
1 cup chicken broth

  1. Cook the chicken

    Warm the olive oil in a pan, add garlic, and cook for just 1 minute, then add thyme, rosemary, salt, and pepper, then place the chicken with skin side up and cook over medium heat for about 20 minutes until golden brown.
  2. Prepare the sauce

    In the same cooking pan, add melted butter and flour then stir until the flour is dissolved into the butter and turns golden, then cook the minced garlic for about 20 seconds, then pour in the chicken broth and the lemon juice, and wait until the sauce is thickened.
  3. Serve

    Arrange the chicken on serving plates and spoon sauce over each portion and garnish it with fresh parsley.
