Ramadan Recipes: Kuku Sabzi

This Kuku sabzi recipe is a Persian baked omelet with a twist on the traditional via the addition of potatoes to soften the intensity of the herbs.

- 1 small brown onion - grated
- 250g chopped garlic chives
- 65g chopped coriander
- 35g chopped parsley
- 4 garlic cloves
- 4 eggs
- 2 tsp ground turmeric
- 125ml olive oil
- salt to taste

- Cook the potato
تم نسخ الرابطGrate the potato, then put it in a pan, cover it with cold water, and season well with salt. Bring to a boil over high heat, then reduce to a simmer and cook the potato until soft.
- Mix all the ingredients
تم نسخ الرابطIn a large bowl, add the cooked potato, and onion, along with the herbs, garlic, egg, turmeric, and salt. mix well.
- Cook the kuku sabzi
تم نسخ الرابطHeat the olive oil in a frying pan over low heat, add the mixture, then cover with a lid and cook for 10 mins. Carefully flip it, uncooked side down, and cook it a further 10 mins until golden.
