Gobi Manchurian

1 medium cauliflower, cut into florets
1/2 cup all-purpose flour
1/4 cup cornflour
1 tablespoon ginger-garlic paste
1 tablespoon soy sauce
1 tablespoon tomato ketchup
1 tablespoon chili sauce
1 teaspoon vinegar
1 onion, finely chopped
2-3 green chilies, finely chopped
2-3 garlic cloves, minced
1 bell pepper, diced
Spring onions, for garnish
Salt to taste
Oil for frying and cooking
Fresh coriander leaves for garnish

  1. Prepare the Cauliflower

    Wash the cauliflower thoroughly and cut it into medium-sized florets. Blanch the florets in hot water for 5 minutes, then drain and set aside.
  2. Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornflour, ginger-garlic paste, soy sauce, tomato ketchup, chili sauce, vinegar, and salt. Gradually add water to form a smooth batter, ensuring there are no lumps.
  3. Coat the Cauliflower

    Dip each blanched cauliflower floret into the batter, ensuring it is evenly coated. Heat oil in a deep frying pan and fry the coated cauliflower until golden brown and crispy. Remove and drain on paper towels to remove excess oil.
  4. Prepare the Sauce

    In a separate pan, heat a tablespoon of oil. Add minced garlic and sauté until fragrant. Then, add chopped onions, green chilies, and diced bell peppers. Cook until the vegetables are slightly softened.
  5. Add the Flavors

    Stir in soy sauce, tomato ketchup, and chili sauce, adjusting the quantities according to taste preferences. Allow the sauce to simmer for a few minutes until it thickens slightly.
  6. Combine and Serve

    Add the fried cauliflower florets to the prepared sauce and toss until they are well coated. Garnish with chopped spring onions and fresh coriander leaves.
