This cheesy easy eggplant casserole recipe is one of the best flavorful dishes you can serve as a main or a side during Ramadan. Even meat lovers are going to enjoy this one.

Eggplant Casserole

2 large eggplants
¼ teaspoon salt
Olive oil
½ teaspoon Italian pizza seasoning
¼ teaspoon Red pepper flakes
¼ teaspoon black pepper
1 cup pizza sauce
1 cup mozzarella cheese

  1. Cut the eggplants

    Wash the eggplants and cut them into rounds of ¼ to ½ inch thick slices. Keep the skin of the eggplants on.
  2. Roast the eggplants

    Line a baking pan with parchment paper, arrange the eggplant slices, brush with olive oil, and sprinkle salt. Roast it for 10 to 12 minutes in a preheated oven to 425 degrees F. Flip all the slices, and roast for another 10 to 12 minutes.
  3. Arrange the eggplant casserole

    Spread 2 tablespoons of pizza sauce in your casserole dish, arrange half of the roasted eggplant slices, spread half a portion of the sauce and cheese on top, and season it with pizza seasoning and pepper flakes. Repeat.
  4. Bake the eggplant casserole
