Chicken Teriyaki Bowl

¼ cup soy sauce
3 tablespoons light brown sugar
4 tablespoons water divided
1 tablespoon rice vinegar
1 tablespoon toasted sesame oil
1 fresh ginger 1-inch knob, grated
3 garlic cloves grated
2 teaspoons cornstarch
1 teaspoon Sriracha
1 head broccoli cut into florets
2 tablespoons water
1 tablespoon avocado oil
1 pound boneless skinless chicken breast cut into 1-inch cubes
Brown rice for serving
Thinly sliced scallions for serving
Toasted sesame seeds for serving

  1. Prepare the Teriyaki Sauce

    In a medium bowl, whisk together soy sauce, brown sugar, 2 tablespoons water, rice vinegar, toasted sesame oil, grated fresh ginger, grated garlic cloves, cornstarch, and Sriracha until well combined.
  2. Steam the Broccoli

    Place the broccoli florets in a medium, microwave-safe bowl. Add the remaining water, cover the bowl with plastic wrap, and microwave on high for about 2 minutes or until the broccoli is lightly steamed. Carefully remove the plastic wrap.
  3. Cook the Chicken

    Heat avocado oil in a large skillet over medium-high heat. Add the cubed chicken breast and cook, tossing frequently, until the chicken is browned on all sides and reaches an internal temperature of 165°F, which should take about 7-8 minutes in total.
  4. Simmer with the Sauce

    Once the chicken is cooked, add the prepared teriyaki sauce to the skillet. Cook the chicken with the sauce until the sauce is reduced and thickened, which should take about 2 minutes.
