Ramadan Recipes: Chicken Shawarma Fatteh

Fatteh is a Levantine dish consisting of toasted bread, rice, and some sort of meat, and it is usually topped with a garlicky sauce. Today's fatteh recipe is made with chicken shawarma.

- 1kg skinless boneless chicken breast
- 2 tsp butter
- Onion slices
- 1 garlic glove
- salt
- black pepper
- ½ tsp Arabic seven-spice mix
- 2 tbsp parsley
- 2 ½ cups rice

- pita bread cubes
Chicken Shawarma
- 2 cups yogurt
- 2 minced garlic cloves
- 2 tbsp lemon juice
- 1 tbsp parsley

- Cook the chicken
تم نسخ الرابطIn a pot, melt the butter over medium heat, add the thinly sliced chicken, onion slices, minced garlic, salt, black pepper, and the seven-spice mix, and stir well for about 15 minutes until the chicken is fully cooked, and finally add the parsley on top.
- Cook the rice
تم نسخ الرابطIn a pot over medium heat black pepper, cloves, cardamom pods, and bay leaves in melted butter, add salt, and rice and mix everything well, add cooking liquid (about 3 cups of stock), bring to a boil then lower heat and cover until done. It will cook for 30 minutes.
- Bake the bread
تم نسخ الرابطSpray a baking sheet, spread bread cubes over and spray with oil. Bake in a preheated oven until crispy.
- Prepare the sauce

- Serve
