Ramadan Recipes: Chechebsa

Chechebsa, also known as kita firfir, is a classic breakfast dish in Ethiopia. It starts with a basic batter that's then pan-fried until crispy. That kita flatbread is then torn into small pieces and tossed with spiced butter until soft and almost pudding-like.

- 1 1/4 cups all-purpose flour (or 1 cup all-purpose flour and 1/4 cup teff flour)
- 1/2 tsp salt
- 3/4 cup water
- 4 tbsp niter kibbeh (Ethiopian spiced butter)
- 2 tsp berbere
- 1 tbsp oil

- Make the Kita (Flatbread)
تم نسخ الرابطMix the flour with a pinch of salt, add water slowly, and start making the dough. When it becomes medium-hard, cover it using a thin layer of kitchen plastic and let it sit for about half an hour.
- Shape the Kita
تم نسخ الرابطPrepare a clean surface and put some flour on it so the dough will not stick. Roll the dough until it gets very thin.
- Fry the Kita
تم نسخ الرابطAdd some oil to a frying pan and heat it up to medium hot, then place the dough flat on the pan. Wait two to three minutes until you see some light-brown spots and flip the Kita so the top gets fried too. Put it aside until it cools.
- Make the Chechebasa
تم نسخ الرابطShred the Kita up into small pieces, put niter kibbeh and berbere onto a frying pan, and set the oven to medium for about a minute. Add the pieces of Kita together with niter kibbeh and berbere mix and mix them all together so that all pieces of the Kita are soaked uniformly.
- Serve
