Zucchini Ravioli

4 medium zucchinis
2 cups vegan cream cheese
Italian seasoning, to taste
¼ cup chopped olives
2 cups fresh spinach, roughly chopped
¼ cup thinly sliced basil, divided
1 clove garlic, minced
Salt and black pepper, to taste
2 cups tomato sauce
Vegan Parmesan for topping
Extra-virgin olive oil for drizzling

  1. Preheat the Oven

    Set your oven to preheat to 190°C.
  2. Make the Zucchini Noodles

    Slice the zucchini into thin, flat strips using a vegetable peeler and set aside.
  3. Prepare the Filling

    Mix vegan cream cheese, Italian seasoning, olives, spinach, 2 tablespoons of basil, garlic, salt, and pepper until smooth.
  4. Assemble Ravioli

    Now, layer the zucchini strips into a "T" shape, add filling, fold, and flip seam-side down.
  5. Pour the Sauce
