Ramadan Recipe: Zucchini Patties

If you have some zucchini pulp on hand, then you must try this delicious recipe. It is a zucchini-based batter with eggs and spices, shallowly fried in cooking oil. These patties are a great way to sneak vegetables into kids’ meals. Also, you can enjoy them alone, next to a salad, or stuffed in a sandwich.

  • Ingredients of Zucchini Patties

Zucchini Patties

The pulp of 6 zucchinis
1 cup parsley, chopped
1 white onion, chopped
3 eggs
½ cup water
1 cup flour
1 tsp salt
1 tsp ground cumin
1 tsp turmeric
1 tsp baking powder
½ tsp black pepper
1 cup cooking oil

  1. Make the Batter

    In a large mixing bowl, add your wet ingredients including zucchini pulp, eggs, and water. Combine the parsley and onions. Then, add the flour, salt, cumin, turmeric, baking powder, and black pepper.
  2. Fry the Patties

    Heat oil in a large, deep pan. Use a cookie scoop or a ⅓ measuring cup to portion the batter, then carefully fry it in the hot oil. Serve while hot and crisp and enjoy!
