Yemeni Zhoug

1/4 tsp whole coriander seeds
1/2 tsp whole cumin seeds
1/4 tsp freshly ground black pepper
3 green cardamom pods
4 medium cloves garlic, roughly chopped
4 to 6 fresh Bird's eye chili, red or green (to taste), roughly chopped
1 tsp kosher salt, plus more to taste
1 bundle fresh parsley
1 bundle fresh cilantro
1/2 cup extra-virgin olive oil

  1. Grind the Spices

    Start by grinding coriander seeds, cumin, black pepper, and cardamom seeds using a spice grinder or a mortar and pestle. This step releases their deep, aromatic flavors, forming the foundation of the sauce.
  2. Make the Chili-Garlic Paste

    Add garlic, Bird’s eye chili (also known as Thai chili), and salt to the ground spices. Continue grinding until they form a rough, fragrant paste, ensuring the chili’s heat blends well with the other ingredients.
  3. Incorporate Fresh Herbs

    Pick the leaves from the parsley and cilantro stems. Add the herbs gradually, one small handful at a time, pounding them into the mixture until a coarse paste forms. This step enhances the sauce’s vibrant green color and fresh taste.
  4. Blend with Olive Oil

    Slowly drizzle in olive oil while stirring or grinding to create a smooth emulsion. The oil binds the ingredients together, adding a silky texture and depth to the sauce.
  5. Season and Store
