Ramadan Recipe: Sweet Vermicelli

Sweet Vermicelli (Meethi Seviyan) is a popular dessert in South Asian cuisine, especially during Ramadan and Eid Al Fitr. This dish is made by frying thin vermicelli noodles in ghee (clarified butter) until golden, then cooking them in sweetened milk flavored with cardamom, saffron, and sometimes rose water or kewra essence. It is garnished with chopped nuts like almonds, pistachios, and cashews, as well as dried fruits like raisins. The result is a rich, creamy, and aromatic dessert that's perfect for celebrating the end of Ramadan. It's often served warm or chilled, depending on personal preference, and is a comforting treat that is beloved by many during festive occasions.

Sweet Vermicelli

1 cup vermicelli
1 tbsp butter or ghee
1-liter full fat milk
½ cup condensed milk
5 mastic stones
5 cardamom pods
2 tbsp sugar
1 cinnamon stick
½ tsp vanilla

  1. Cook the Vermicelli

    Add vermicelli to a large pot and keep stirring until golden brown. Then, add the butter and stir together. Once the butter is melted, gradually pour the milk over the vermicelli, followed by the condensed milk.
  2. Add the Spices

    Crush your mastic stones into a powder and add to the milky vermicelli with the cardamom pods, sugar, cinnamon stick, and vanilla. Reduce heat, cover, and keep stirring until you get a pudding-like texture.
  3. Serve

    Pour into serving plates, garnish with nuts or dried fruits, and enjoy.
