Mutabbaq is a versatile stuffed flatbread that can be enjoyed in both savory and sweet variations, making it a perfect treat for Ramadan. While the classic savory versions are filled with cheese or spiced meat, this delightful, sweet version features a rich cheese filling wrapped in crispy, golden layers of phyllo pastry. Once baked to perfection, it is generously drizzled with a fragrant orange-lemon syrup, adding a refreshing citrusy sweetness. Light yet indulgent, this dessert is a wonderful addition to iftar, bringing a balance of texture and flavor to the Ramadan table.

Sweet Mutabbaq

16 phyllo pastry sheets
2 cups ricotta cheese
1 cup goat cheese
1 ¼ sugar
100 ml water
3 tbsp fresh lemon juice
5 tbsp fresh orange juice
½ cup butter, melted

  • Method & Directions of Sweet Mutabbaq

  1. Prepare the Cheese Filling

    In a mixing bowl, combine the ricotta cheese, goat cheese, and ⅓ cup of sugar. Mix well until you achieve a smooth, creamy consistency then set it aside.
  2. Make the Orange Lemon Syrup

    In a small saucepan, melt the remaining sugar with 100ml of water over medium heat. Once the mixture begins to boil, add the lemon juice and orange juice. Let it boil for an additional 2 minutes, then remove from heat and allow it to cool.
  3. Cut the Phyllo Pastry

    Cut a 3cm (1.2-inch) larger sheet than your baking pan. If using a 23x23cm (9x9 inch) pan, cut a 10–11-inch square.
  4. Prepare the Phyllo Layers

    Lay the sheet on a work surface and brush lightly with melted butter. Place a phyllo sheet on top, brush it with butter, and repeat the process until 8 layers are stacked. Transfer the stacked sheets into your baking pan.
  5. Start the First Layer

    Evenly spread the prepared ricotta cream over the phyllo layers. Trim the edges of the phyllo, leaving about 1-2cm (0.6 inches) to fold over the filling. This prevents an overly thick crust.
  6. Finish Your Dessert Layers

    On a separate surface, stack 7 more phyllo sheets, brushing each with butter. Trim the corners slightly to round the edges, then carefully flip and place them over the ricotta filling. Remove the baking sheet used for flipping and ensure the phyllo is neatly arranged and folded for a perfect finish. Brush the surface generously with butter.
  7. Bake to Perfection

    Preheat your oven to 176.7°C (350°F). Bake for 25-30 minutes, or until the pastry is golden brown and crisp.
  8. Finish with Syrup & Serve

    Once baked, remove the dessert from the oven and immediately drizzle the entire surface with the prepared orange-lemon syrup, covering all corners. Reserve extra syrup to drizzle when serving. Let the dessert cool before slicing and serving. Enjoy!
