  • Ingredients of Steak Salad

Steak

450 grams steak, seasoned with salt and pepper
5 tsp balsamic vinegar
2 tsp olive oil
1 tsp fresh rosemary, finely chopped
1 tsp soy sauce
½ tsp Dijon mustard
1 garlic clove, finely grated
¼ tsp honey

Salad

1 cup corn
12 cherry tomatoes, halved
Half a small red onion, thinly sliced
1 tbsp olive oil
1 tbsp rice vinegar
1 small head radicchio, cored and chopped into large pieces
1 romaine heart, chopped into large pieces
2 radishes, thinly sliced
85 grams of blue cheese, crumbled

Salad Dressing

1 egg, hard-boiled
1 clove garlic, peeled
1 lemon, juiced
½ cup light-flavored oil, avocado or safflower
1 tbsp Dijon mustard
1 tsp Worcestershire sauce
1 tsp honey or maple syrup
¼ tsp soy sauce
⅛ tsp fine sea salt
  • Method & Directions of Steak Salad

  1. Oven Preparation

    Preheat your oven to 200°C.
  2. Prepare the Marinade

    In a small bowl, whisk together balsamic vinegar, olive oil, rosemary, soy sauce, Dijon mustard, grated garlic, and honey until well combined.
  3. Sear the Steak

    Heat a heavy-bottomed, oven-safe skillet over medium-high heat. Once hot, add a tablespoon of high-heat cooking oil, such as avocado oil. Place the steaks in the pan and sear without moving for 2 to 3 minutes until a golden crust forms. Flip and cook for another 2 to 3 minutes. If the steaks are thick, sear the edges for about 30 seconds.
  4. Finish in the Oven

    Transfer the skillet to the preheated oven and cook for 3 to 7 minutes, depending on the steak’s thickness and your preferred doneness. Remove from the oven, place the steak on a plate, and spoon the marinade over the top. Let it rest for 5 to 10 minutes.
  5. Cook the Corn

    Using the same skillet, add the corn and cook over medium heat until the kernels are heated through and lightly browned. Transfer to a medium bowl.
  6. Make the Corn Salsa

    To the bowl with corn, add cherry tomatoes, red onion, olive oil, and rice vinegar. Stir to combine and set aside to marinate.
  7. Prepare the Salad Dressing

    In a blender, combine a hard-boiled egg, minced garlic, lemon juice, oil, Dijon mustard, Worcestershire sauce, honey, soy sauce, and salt. Blend until smooth and creamy.
  8. Assemble the Salad

    In a large bowl, toss chopped romaine lettuce and radicchio with the dressing until well coated. Lightly season with salt and pepper. Top with corn salsa, sliced radishes, and crumbled blue cheese.
  9. Serve the Dish

    Slice the steak against the grain and either arrange it over the salad or serve on the side with individual portions. Drizzle any remaining marinade and steak juice over the top before serving.
