  • Ingredients of Spinach and Feta Sandwich

Spinach and Feta Sandwich

½ tbsp olive oil
1 clove garlic, minced
1 cup frozen chopped spinach
1 pinch salt and pepper
4 slices of bread, white or brown
2 tbsp butter
1 cup shredded mozzarella
¼ cup feta cheese
1 pinch crushed red pepper

  1. Sauté Garlic and Spinach

    Add olive oil and minced garlic to a skillet, and sauté over medium heat for about one minute. Then, add frozen spinach (no need to thaw) along with a pinch of salt and pepper. Continue sautéing until most of the moisture has evaporated from the skillet.
  2. Prepare the Bread

    Spread butter over one side of each slice of bread. Flip the bread so the buttered side is facing down, ready to build the sandwiches.
  3. Add Cheese and Spinach

    Divide half of the shredded mozzarella between two slices of bread. Top the mozzarella with crumbled feta cheese. Then, evenly divide the sautéed spinach between the two sandwiches, followed by the remaining shredded mozzarella and a pinch of crushed red pepper flakes.
  4. Assemble the Sandwiches

    Place the second slice of bread on top of each sandwich with the buttered side facing out.
  5. Cook the Sandwiches

    Heat a large skillet over medium-low heat. Once hot, add the sandwiches and cook on each side until golden brown and crispy on the outside, with the cheese melting and gooey inside.
  6. Serve

    Cut the sandwiches in half and serve while warm and crispy!
